Mediterranean Grilled Chicken Salad


I recently acquired a ton of cookbooks. Usually if I want a recipe I just look up something on Pintrest or if I want
something super specific I use Allrecipes or the like.
Now that I have 40 cookbooks, a rolodex full
 of recipes, recipes written on envelopes for a kids 6th
birthday party, a box filled with index cards all with
recipes on them, and the
occasional scrap of paper that has ingredients written on them with no reference on how
to mix them I decided to try some of them out.


First on the list was a bit of printed paper with the title 
'Mediterranean Grilled Chicken Salad.' I have
 no idea what makes this recipe
Mediterranean but it sounds yummy, let's try it!

The recipe asks to grill the chicken on a gas or charcoal grill
with lemon pepper seasoning which sounds amazing
but I don't actually have a grill so instead of grilling
chicken breasts then shredding them, I cut
 raw chicken into bite size pieces and seared
them in a pan with a tablespoon of olive oil.


I really loved the vinaigrette for this recipe and I plan on using it
in different recipes that don't have much flavor. The
potatoes gave the salad a fun texture, I want to
add potatoes to many more salads now! Salad isn't a 
popular meal in my house but I had no leftovers using this recipe.


People are happiest when eating salad.


Mediterranean Grilled Chicken Salad

This recipe takes about 30 minutes

Salad

  • 1 Head leaf lettuce
  • 2 lemon pepper chicken breast fillets
  • 4 red potatoes, cut into small cubes
  • ½ cup mushrooms, halved
  • ½ cup fresh green beans
  • ¼ cup red onion, chopped
  • 6 cherry tomatoes

Vinaigrette

  • ½ cup olive oil
  • ¼ cup white vinegar
  • 1 ½ tbsp. Dijon mustard
  • 1 tbsp. fresh tarragon, minced (1½ tbsp. dried)
  • 2 cloves garlic, minced
  • ½ tsp sugar
  • ¼ tsp black pepper
  1. Prepare a medium fire in a grill
  2. Boil potatoes until tender, about 10-15 minutes
  3. Combine all ingredients of the vinaigrette. Toss ¼ of vinaigrette with cooked potatoes, mushrooms, beans and onion. Set aside
  4. Grill chicken breast until done. On a gas grill it will take about 5-6 minutes per side. On a charcoal grill it will take about 10 minutes per side.Chicken is done when there is no longer any pink on the inside and the juices run clear.
  5. Slice or shred grilled chicken breasts into thin strips.
  6. Cut lettuce, place on plates and top with chicken and remaining ingredients. Garnish with cherry tomatoes

Let's start at the begining....

  Sitting on the kitchen floor playing with knock-off Power Rangers and Godzilla. I always had a thing for letting the bad guy win, he never wins on TV after all. Everyone deserves a taste of victory so my little stuffed toys get kidnapped by Godzilla and the Power Rangers get eaten alive.

  Is that too far back? Sorry I'm not very good at this stuff.... Hi, I'm Ash! I've always had a desire to do things. All the things. Everything. My father was a do-it-all contractor and my mother was a stay-at-home type parent with a passion for painting, quilting, soap-making, candle-dipping, all around decorative being. It was hard to find either of them not on a project and I feel like that's why I try so hard.

  What I'm trying to say here is I want to try everything. All the things. I want to be good at it all too. Jack of all trades, master of none but equally good as a master of some. Being this way I found myself with a ton of projects and I am in a really good place right now to finish most of them. One of them is a blog about my adventures (whether successful or not) to help other people with their projects or motivate someone to start their own. The best way to start I thought was to let people know who I am except I still don't really know myself. This will be as much an adventure for me mentally, physically and I hope for anyone following along.

  I have to mention though, I have an issue sometimes with completing projects in a time frame. I have the mentality that its not going anywhere, I can finish it later. Don't expect timely updates from me. I will post entire adventures not sections of adventures as much as I can. This is one of my new adventures that I am very excited to start! Let's hope for best in every one's new adventures!
